Cucumber & Garlic Salad


Makes 2 servings.

Ingredients

  • 1 medium cucumber
  • 2 cloves of fresh garlic, crushed and grated
  • 1 small onion, finely chopped
  • 2 tablespoons freshly squeezed lemon juice
  • fresh parsley

Preparation

  1. Grate garlic and add to the lemon juice in a small bowl, and let it steep.
  2. Peel alternate 2 inch strips off cucumber skin and dice.
  3. Mix all ingredients together, and top with parsley.
  4. Chill before serving.
