Safe with the Candida Diet

Wilted Greens & Lemon Salad

Makes 4 servings.

Ingredients

  • 1 teaspoon unrefined coconut oil
  • 2 or 3 cloves of garlic, crushed & minced
  • grated zest of 1 lemon
  • juice of 1 lemon
  • 1 bunch leafy greens, i.e. kale, collards, broccoli, rapini, etc.), cleaned well and torn into bite-sized pieces with your fingers

Preparation

  1. Heat oil in a frying pan over medium heat. Add garlic and cook 1 minute.
  2. Add greens and cook until they are tender and begin to wilt, about 5 minutes.
  3. Stir in lemon zest and cook 1-2 minutes.
  4. Remove from heat and toss greens with lemon juice.
  5. Serve immediately..
