Tamara's Tomatillo Salsa

Tomatillos are from Mexico, they look like small green tomatoes with an extra skin.

Ingredients

  • 2 Anaheim chile peppers, roasted, peeled, and chopped
  • 1 pound fresh tomatillos (about 10 to 12), peeled, stems removed
  • 2 fresh Serrano chiles, cut in half
  • 1/2 cup onion, chopped
  • 1 medium clove garlic, minced
  • 1/4 tablespoon chopped fresh cilantro
  • 1 teaspoon olive oil
  • 1 teaspoon lime juice, freshly squeezed
  • 1/4 teaspoon ocean sea salt

Instructions

  1. Pulse tomatillos in food processor or blender until coarsely chopped.
  2. Add peppers and the next 3 ingredients, and pulse until it is diced, but do not over process it.
  3. Pour into a serving bowl and stir in the olive oil, lime juice, and salt until well blended.
  4. Chill and serve.
