Ellen's Salsa
Ingredients

12 to 16 ounces (weight) of tomatoes, diced

1 small (about 3 ounces) onion, diced

juice of 1 lemon or lime, freshly squeezed

1 jalapeno pepper (or 1/2 habanera)

garlic cloves to taste (usually one or two)

1/2 teaspoon ocean sea salt

fresh cilantro to taste, chopped
Preparation

Blend all of the ingredients, except the tomatoes and onions, with the blender setting on "grate."

In a bowl mix everything together, including the tomatoes and onions.

Cover the bowl and set it in the refrigerator to let the flavors blend; for an hour or more (if you can wait
that long).
I use salsa on everything from scrambled eggs to salads, meats and veggies.
