Crockpot Beef Roast with Celery
Ingredients

2 pounds beef roast
-
1-2 tablespoons unrefined coconut oil
-
1 onion, thinly sliced
-
1 whole clove of garlic, peeled and crushed
-
1 celery stalk, sliced and halved
-
1/4 to 1/2 cup of water
-
ocean sea salt & fresh ground pepper, to taste
Preparation

In a medium to hot frying pan heat the coconut oil and sear the beef roast on all sides.

Rub the roast with ocean sea salt and fresh ground pepper.

Put all of the vegetables in bottom of a crockpot.
-
Place the seared beef roast on top of the vegetables.
-
Pour the water over the vegetables and roast, and cook on low all day (up to 8 hours).
